For the Steak Bites:
- 1 ½ lbs sirloin steak or ribeye, NY strip, or tenderloin, cut into 1-inch cubes
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried Italian seasoning
- 1 ½ tablespoons olive oil
For the Potatoes:
- 1 ½ lbs baby Yukon Gold or red potatoes halved
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 ½ tablespoons olive oil
For the Garlic Butter Sauce:
- 3 tablespoons unsalted butter
- 6 cloves garlic minced
- ½ teaspoon red pepper flakes optional
- 1 tablespoon fresh parsley chopped (for garnish)
Step 1: Prepare the Ingredients
Pat the steak bites dry with paper towels and season with salt, pepper, paprika, and Italian seasoning. Set aside.
Cut the potatoes into bite-sized pieces.
Step 2: Cook the Potatoes
Heat 1 ½ tablespoons olive oil in a large skillet over medium-high heat.
Add the potatoes, season with salt and pepper, and cook for 4-5 minutes without stirring to develop a crust.
Stir and continue cooking for another 8-10 minutes, stirring occasionally, until crispy and fork-tender.
Remove from the skillet and set aside.
Step 3: Sear the Steak Bites
In the same skillet, add remaining olive oil and heat over high heat.
Add the steak bites in a single layer (cook in batches if needed).
Sear for 2 minutes per side until browned but still juicy.
Remove from the skillet and set aside with the potatoes.
Step 4: Make the Garlic Butter Sauce
Lower the heat and add butter to the pan. Let it melt.
Stir in minced garlic and cook for 30 seconds until fragrant.
Add back the potatoes and steak bites, tossing to coat in the garlic butter.
Cook for another 1-2 minutes, then remove from heat.
Step 5: Garnish and Serve
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat for best results.
- Variations: Swap regular potatoes for sweet potatoes or add sautéed mushrooms or asparagus.
- For Extra Flavor: Add a squeeze of fresh lemon juice or a drizzle of balsamic glaze before serving.
- Spicy Kick: Increase red pepper flakes or add a dash of hot sauce.
