Ingredients
  

For the Steak Bites:

  • 1 ½ lbs sirloin steak or ribeye, NY strip, or tenderloin, cut into 1-inch cubes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • 1 ½ tablespoons olive oil

For the Potatoes:

  • 1 ½ lbs baby Yukon Gold or red potatoes halved
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ tablespoons olive oil

For the Garlic Butter Sauce:

  • 3 tablespoons unsalted butter
  • 6 cloves garlic minced
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

Step 1: Prepare the Ingredients

  • Pat the steak bites dry with paper towels and season with salt, pepper, paprika, and Italian seasoning. Set aside.
  • Cut the potatoes into bite-sized pieces.

Step 2: Cook the Potatoes

  • Heat 1 ½ tablespoons olive oil in a large skillet over medium-high heat.
  • Add the potatoes, season with salt and pepper, and cook for 4-5 minutes without stirring to develop a crust.
  • Stir and continue cooking for another 8-10 minutes, stirring occasionally, until crispy and fork-tender.
  • Remove from the skillet and set aside.

Step 3: Sear the Steak Bites

  • In the same skillet, add remaining olive oil and heat over high heat.
  • Add the steak bites in a single layer (cook in batches if needed).
  • Sear for 2 minutes per side until browned but still juicy.
  • Remove from the skillet and set aside with the potatoes.

Step 4: Make the Garlic Butter Sauce

  • Lower the heat and add butter to the pan. Let it melt.
  • Stir in minced garlic and cook for 30 seconds until fragrant.
  • Add back the potatoes and steak bites, tossing to coat in the garlic butter.
  • Cook for another 1-2 minutes, then remove from heat.

Step 5: Garnish and Serve

  • Sprinkle with fresh parsley and serve immediately.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat for best results.
