Golden Raspberry Sauce:
- 1 cup golden raspberries fresh or frozen
- 2 tbsp sugar adjust to taste
- 1 tsp lemon juice
- 1 tsp cornstarch optional, for thickening
Cheesecake Base:
- 4 oz cream cheese softened
- 1/4 cup Greek yogurt or sour cream
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 2 tbsp heavy cream
Milkshake:
- 3 large scoops vanilla ice cream
- 1/2 cup whole milk
- 1/2 tsp vanilla bean paste or extract
- 1/4 cup golden raspberry sauce
- 2 tbsp cheesecake base
Garnish & Assembly:
- Whipped cream
- Graham cracker or shortbread cookie crumbles
- Extra golden raspberry sauce
- Fresh golden raspberries
- Optional: white chocolate curls mint sprigs
Step 1: Make the Golden Raspberry Sauce
Combine raspberries, sugar, and lemon juice in a saucepan over medium heat.
Simmer for 5–7 minutes until berries break down.
For thicker sauce, stir in cornstarch mixed with water and cook another 1–2 minutes.
Let cool and strain if desired for a smoother texture.
Step 2: Prepare the Cheesecake Base
In a bowl, beat softened cream cheese until smooth.
Add powdered sugar, Greek yogurt, vanilla, and heavy cream.
Mix until thick and creamy but pourable.
Step 3: Blend the Milkshake
In a blender, combine vanilla ice cream, milk, vanilla, 1/4 cup raspberry sauce, and 2 tbsp cheesecake base.
Blend until smooth and creamy. Adjust flavor by adding more raspberry sauce or cheesecake base as needed.
Step 4: Assemble the Milkshake
Swirl raspberry sauce around the inside of a chilled glass.
Add cookie crumbles to the bottom.
Pour in the blended milkshake.
Top with whipped cream, cookie crumbles, extra raspberry sauce, and fresh golden raspberries.
