For the Chicken:

  • 4 boneless skinless chicken breasts (or thighs)
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic minced
  • 2 tablespoons unsalted butter melted
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley for garnish

For the Potatoes:

  • 1 1/2 pounds baby potatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Season the Chicken: In a small bowl, mix salt, black pepper, paprika, and Italian seasoning. Rub the chicken breasts with olive oil and coat evenly with the seasoning mixture.
  • Prepare Garlic Butter Mixture: In another bowl, combine minced garlic, melted butter, and Parmesan cheese.
  • Season the Potatoes: Toss the baby potatoes with olive oil, salt, black pepper, garlic powder, onion powder, and red pepper flakes. Sprinkle with Parmesan cheese.
  • Arrange in Pan: Lightly grease a large oven-safe skillet or baking sheet. Arrange the seasoned potatoes on one side and the chicken on the other. Brush the chicken generously with the garlic butter Parmesan mixture.
  • Bake: Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are crispy and golden brown.
  • Broil (Optional): For extra crispiness, broil for the last 2-3 minutes.
