Ingredients

  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 1 ¾ cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract

Optional Add-ins:

  • ½ teaspoon cinnamon or nutmeg
  • ½ cup chocolate chips blueberries, or chopped nuts

Instructions
 

Prepare the Batter:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the buttermilk, eggs, melted butter, and vanilla extract. Whisk until blended.
  • Gently pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.

Let the Batter Rest:

  • Allow the batter to rest for 5–10 minutes to enhance fluffiness.

Heat the Pan:

  • Preheat a non-stick or cast-iron skillet over medium heat and lightly grease with butter or oil.

Cook the Pancakes:

  • Pour ¼ cup of batter onto the skillet for each pancake.
  • Cook for 2–3 minutes until bubbles form and the edges set, then flip and cook for another 1–2 minutes.

Keep Warm & Serve:

  • Keep pancakes warm in a 200°F oven while cooking the rest.
  • Serve hot with your favorite toppings.
