Ingredients
  

For the Beef:

  • 1 lb ground beef lean or regular
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning or homemade
  • 1/2 cup beef broth or water
  • 1/2 teaspoon smoked paprika optional
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste

For the Nachos:

  • 1 large bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/2 cup guacamole or sliced avocados
  • 1 cup salsa
  • 1/4 cup sliced black olives
  • 1/2 cup sliced green onions
  • 1 fresh jalapeño sliced thin (optional)
  • Fresh cilantro chopped (optional)
  • Lime wedges optional

Instructions
 

Prepare the Beef:

  • In a large skillet, heat olive oil over medium-high heat. Add chopped onion and cook until softened (about 3-4 minutes). Add minced garlic and cook for another 30 seconds. Add ground beef, breaking it up into small pieces, and cook until browned (5-7 minutes). Drain excess fat if necessary.

Season the Beef:

  • Stir in taco seasoning, smoked paprika, cumin, salt, and pepper. Add beef broth (or water), and let it simmer for 5 minutes until the beef is tender and fully flavored.

Layer the Nachos:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Spread tortilla chips evenly on the sheet. Spoon the cooked beef mixture over the chips, followed by a generous layer of shredded cheddar and Monterey Jack cheese.

Bake the Nachos:

  • Bake the nachos for 10-12 minutes, or until the cheese is fully melted and bubbly.

Top with Toppings:
