- 1 tbsp olive oil
- 1 small onion finely diced
- 3 garlic cloves minced
- 250 g 8 oz mushrooms (cremini or button), sliced

- 1/2 cup heavy cream
- 1/4 tsp dried thyme
- Salt and pepper to taste
- Optional: 1 tsp soy sauce or a splash of white wine

- 4 large eggs
- 1 tbsp vinegar for poaching
- Salt to season

Step 1: Prepare the Fries
Peel and cut the potatoes into sticks.
Soak in cold water for 30 minutes, then drain and pat dry.
Toss with olive oil, salt, and seasoning.
Bake at 425°F (220°C) for 30–40 minutes or air fry at 400°F for 20–25 minutes until crisp and golden.
Step 2: Make the Mushroom Sauce
Heat butter and olive oil in a skillet over medium heat.
Sauté onions for 5 minutes until soft, then add garlic for 1 minute.
Add mushrooms and cook until browned, about 8 minutes.
