For the Dough:

- 1 tsp sugar
- 1 packet active dry yeast or 2 ¼ tsp
- ¾ cup warm water about 110°F
- ¼ cup olive oil
- 1 tbsp cornmeal for dusting

- 2 cups mozzarella cheese shredded
- 1 cup Parmesan cheese freshly grated
- 1 lb Italian sausage mild or spicy
- 1 large bell pepper chopped
- 1 medium onion chopped
- 1 clove garlic minced
- 1 can 28 oz crushed tomatoes
- 1 can 6 oz tomato paste
- 1 tbsp tomato sauce
- 1 tsp sugar
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 tsp red pepper flakes optional
- Salt and pepper to taste

Step 1: Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir and let it sit for 5-10 minutes until frothy.
