Ingredients
  

For the Goat Cheese Layer:

  • 8 oz goat cheese soft log-style
  • 4 oz cream cheese softened
  • 2 tbsp sour cream or Greek yogurt
  • 1 clove garlic minced or grated
  • 1 tsp fresh thyme or Italian seasoning
  • Pinch of salt and black pepper

For the Bruschetta Topping:

  • 1 ½ cups cherry tomatoes halved
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar
  • 1 tsp honey or sugar
  • Fresh basil chopped (for garnish)

Optional Garnishes:

  • Balsamic glaze for drizzling
  • Extra chopped basil or parsley
  • Crushed red pepper flakes

For Serving:

  • Toasted baguette slices crostini, pita chips, or crackers

Instructions
 

Step 1: Roast the Tomatoes

  • Preheat oven to 400°F (200°C).
  • Toss cherry tomatoes with olive oil, minced garlic, salt, and pepper.
  • Spread on a baking sheet and roast for 15–20 minutes until softened and lightly caramelized.
  • Stir in balsamic vinegar and honey. Set aside.

Step 2: Make the Cheese Base

  • In a mixing bowl, combine goat cheese, cream cheese, sour cream, garlic, thyme, salt, and pepper.
  • Beat until smooth and creamy using a hand mixer or fork.

Step 3: Assemble the Dip

  • Spread the cheese mixture into a shallow oven-safe dish.
  • Spoon roasted tomatoes evenly over the top.

Step 4: Bake the Dip

  • Reduce oven temperature to 375°F (190°C).
  • Bake for 15–20 minutes, or until bubbly and slightly golden on top.

Step 5: Garnish and Serve

  • Let cool for 5–10 minutes. Drizzle with balsamic glaze, sprinkle chopped basil, and serve with toasted bread or crackers.

Notes

  • Make Ahead: Prepare cheese base and tomato topping separately a day in advance. Store in the fridge and assemble before baking.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat at 350°F until warmed through.
  • Variations: Add chopped olives, sun-dried tomatoes, or red pepper flakes for extra flavor. Try with whipped feta for a different cheese twist.
  • Vegan Option: Substitute with vegan goat cheese, vegan cream cheese, and use agave instead of honey.
