- Fresh basil chopped (for garnish)
Optional Garnishes:

For Serving:

Step 1: Roast the Tomatoes
Preheat oven to 400°F (200°C).
Toss cherry tomatoes with olive oil, minced garlic, salt, and pepper.
Spread on a baking sheet and roast for 15–20 minutes until softened and lightly caramelized.
Stir in balsamic vinegar and honey. Set aside.
Step 2: Make the Cheese Base
In a mixing bowl, combine goat cheese, cream cheese, sour cream, garlic, thyme, salt, and pepper.
Beat until smooth and creamy using a hand mixer or fork.
Step 4: Bake the Dip
Reduce oven temperature to 375°F (190°C).
Bake for 15–20 minutes, or until bubbly and slightly golden on top.
Step 5: Garnish and Serve
- Make Ahead: Prepare cheese base and tomato topping separately a day in advance. Store in the fridge and assemble before baking.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat at 350°F until warmed through.
- Variations: Add chopped olives, sun-dried tomatoes, or red pepper flakes for extra flavor. Try with whipped feta for a different cheese twist.
- Vegan Option: Substitute with vegan goat cheese, vegan cream cheese, and use agave instead of honey.
