Ingredients
  

Main Ingredients:

  • 2 boneless skinless chicken breasts (or thighs), sliced into thin strips
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red onion thinly sliced
  • 2 tablespoons olive oil

Fajita Seasoning Blend:

  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional for heat
  • Toppings & Garnishes Optional:
  • Flour or corn tortillas warmed
  • Fresh cilantro chopped
  • Lime wedges
  • Sour cream or Greek yogurt
  • Shredded cheese cheddar, Monterey Jack, or cotija
  • Guacamole or sliced avocado
  • Salsa or pico de gallo

Instructions
 

Step 1: Prepare the Ingredients

  • Slice the chicken breasts or thighs into thin, even strips.
  • Thinly slice the bell peppers and onion into similar-sized strips for even cooking.

Step 2: Season the Chicken & Veggies

  • In a large mixing bowl, combine the sliced chicken, bell peppers, and onion.
  • Drizzle with olive oil, then sprinkle the fajita seasoning blend over the top.
  • Toss well to ensure everything is evenly coated.

Step 3: Preheat & Cook in the Air Fryer

  • Preheat your air fryer to 390°F (200°C) for 3 minutes.
  • Place the seasoned chicken and vegetables in a single layer in the air fryer basket. (Cook in batches if necessary.)
  • Air fry for 12–15 minutes, shaking the basket halfway through, until the chicken is fully cooked (165°F internal temperature) and slightly charred.

Step 4: Warm the Tortillas

  • While the chicken cooks, warm the tortillas in a dry skillet over medium heat for 30 seconds per side or microwave them wrapped in a damp paper towel for 20 seconds.

Step 5: Assemble & Serve

  • Fill each tortilla with the chicken and vegetable mixture.
  • Add your favorite toppings, such as fresh cilantro, a squeeze of lime, sour cream, shredded cheese, guacamole, or salsa.
  • Serve immediately and enjoy!

Notes

  • For Extra Flavor: Let the chicken marinate in the seasoning for 15–30 minutes before cooking.
